Organic Earth’s Chicken Curry
This recipe serves 4 people.
Our creamy and rich chicken curry is a best seller in our cafe! Fresh ginger and turmeric really add that something special to it and now you can make it at home, just follow our easy recipe.
What you will need:
400gr Red onions
50gr Fresh Ginger
10gr Fresh Turmeric
72gr Curry Powder
130gr Cumin Powder
550gr Chicken Breast
400ml Coconut Milk
200gr Tomato Paste
40ml White wine vinegar
A pinch of fresh grounded chilli
A pinch of fresh grounded coriander
Fresh coriander as a garnish
Chop the carrots into big chunks
Carefully dice the red onion
Chop the garlic into small pieces
Cut the chicken into medium-sized chunks
Ground the fresh ginger and turmeric
Mixed them together and leave them on the side, in a pot
Heat up the oil in a large saucepan on a medium heat
Add the carrots and caramelise for about 10 minutes by stirring often
Add the diced onions and cook down until soft
Stir the spices into the onion, together with garlic and fresh turmeric and ginger
Add the chicken into the spice mix
Add the tomato paste and stir
Lower the heat and gently cook for 10 minutes
Add some warm water if the sauce is getting too dry
Pour the coconut milk and stir
Now leave the curry simmer for about an hour, on low heat
Add the vinegar and stir
Let it simmer for another 5 minutes
This curry is best served hot and with a side of white rice, decorate it with fresh coriander if you like!
